Ingredients
- 1 tablespoon olive oil
- button mushrooms
- red or green bell pepper
- chicken - cut into strips
- 2 cloves garlic - crushed
- one medium onion -finely chopped
- chicken stock
- crème freche (or single cream)
- jalapenos (I use them from a jar and they work just as good as fresh, if not better)
Method
- Fry the peppers, onion and musrooms till softened.
- Add the garlic, chicken and jalapenos and continue to cook till the chicken starts going brown and is cooked through.
- Add chicken stock and simmer for about 10 minutes.
- Add the crème freche (or cream) along with grated cheese and cook for a couple of minutes until warmed through.
- Add seasoning to taste and serve with a healthy sized portion of tagliatelle.
